Foundation Gelato Making Course Objective & Outline:

This foundation gelato making course hosted by The SubZero Station is an introductory course designed for beginners to understand the concept of Ice-cream and Gelato. Understanding the basis of what’s in a Gelato recipe and the making of Gelato.

This course allows participants to gain basic knowledge to start a Gelato business from existing recipes.

Session I:

  1. The Origins of Ice Cream
  2. Knowledge of difference between artisan ice cream and industrial ice cream
  3. Types of frozen dessert
  4. Introduction to raw ingredients

Session II:

  1. What is Anti-Freezing power/melting power in Gelato terms
  2. Understanding of Gelato production cycle
  3. Gelato machines & complementary equipment

Session III:

  1. Ingredients & mixing tools preparation
  2. Hands-on (Fruits Sorbet, White Base Gelato, Yogurt Gelato)
  3. Gelato machine operation
